I have very, very similar yarn from JaWoll. However, one skein was not sufficient for one sock. I need to figure out how to extend to finish the sock--like add a solid blue toe or something. The yarn is the cotton/wool blend.
I do stuff like that all the time. Blue toes, heels, and a band around the top will look terrific, although if you already have one sock mostly knit, blue toes are fine too. ;)
